Day 4: Fresh Start Detox Project

Oh, glorious greens!  I will tell you I totally crave a big green leafy salad or a tall glass of Green Goddess.  I wasn’t always like this, however. I can remember when I hardly ate a slice of cucumber a few years back. I know that I, along with many Americans, didn’t get enough veggies in my diet. Little by little, I started to learn to cook and eat greens and now I can’t live without them.

Nutritionally greens are very high in calcium, magnesium, iron, potassium, zinc, phosphorous, and vitamins A, C, E and K.  They are crammed with fiber, folic acid, chlorophyll and many other micronutrients and phytochemicals (great for athletes!). 

There are so many greens to choose from and the key is to CHOOSE any or all of the following:  kale, watercress, mustard greens, arugula, bok choy, Swiss chard, spinach, dandelion, and broccoli rabe.

Here’s a delicious, GREEN, and easy recipe to try:

Spinach and Radicchio Salad with Mustard Vinaigrette

Serves 4

1 large bunch fresh spinach stems removed cut into bite-size pieces

1 small head radicchio, cut into bite-sized pieces

Vinaigrette:  3 large whole scallions, finely minced, 1 Tbs Dijon mustard, 3 Tbs olive oil, 3 Tbs red wine vinegar, 1/3 cup apple juice

Combine spinach and radicchio in a salad bowl, set aside.  In a small mixing bowl, combine scallions, mustard, oil, vinegar, and apple juice.  Whisk with a fork. Pour over salad, and serve at once.

Get into the habit of adding these dark, leafy green vegetables to your daily diet. Try it out for a month and see how you feel.

I can see a difference already from eating healthy! I thought I ate “somewhat” healthy before but this is it! Wow, it’s funny my girls are now saying “Mom, is this organic???” And they are trying things that they never would have before. Thank you for that little recipe above! I’ll have to try it when the detox is over….saw that you mentioned Green Goddess as well, have you tried the Green Goddess juice at the juice bar at whole foods…it is so delicious! It has kale, cucumber, parsley, broccoli, pineapple, and lime! It is one of my favorites…I make it at home a lot too!

So day 4 and I’m kicking this cough/cold in the butt! I went to yoga last night and felt great! felt so light, balanced, flexible…energy was a little low but I think that is because I was out of Yoga for 4 days and have had this cold. I was up at 5am and at 6am Yoga and again felt awesome! My postures were so good, I can’t explain how much better my balance is. Love it!

Excited to continue, I know the weekends can be a little harder because of down time, but I’ll keep busy and am looking forward to being able to prepare the foods as I’m going to eat them. Right now nights are tough because I’m making my dinner, plus my breakfast and lunch for the next day, although I love being prepared, gives me a sense of control over what I’m eating and it feels great!
