St. Paddy’s Day Smoothie

Since I’m married to an Irishman and all, celebrating St. Patrick’s Day is a must in the Ryan household. Or at least I think so. I believe it goes all the way back to my college days, waking up at dawn and heading to the bar for some green beer.

Nowadays, I’m digging the green smoothies. I made this one right after spin class, and even though I like to sip and savory my drinks, I inhaled this one.  Luckily I took a pic before it was gone!

Isn’t it so pretty?

Let’s make one, shall we?

Ingredients:

1 handful of spinach leaves (2 cups)

1 cucumber

1 orange

1 cup unsweetened plain almond milk (you can use unsweetened coconut if you prefer)

1 Tbsp. of lime juice (I used 1/4 of a lime and squeezed the juice)

Handful of ice cubes (I used 8 of them)

Blend together.   Drink up!
