Spring Renewal Asparagus Soup (it’s on the detox menu!)
Here are the ingredients:
2 cups asparagus, chopped
1 clove garlic, peeled
1/2 small onion, sliced
1 cups vegetable broth
1 ounce raw cashews
Sea salt to taste
Let’s get to it:
Blend 1/2 cup of the broth with the cashews until smooth. Leave it in the blender.
Add the asparagus, onions, garlic to the blender, along with remaining broth. Cover the blender and blend on high until perfectly smooth.
Pour the soup into a saucepan and heat until hot, stirring frequently. Add sea salt, if needed, to taste.
I added a few orange slices for a simple zestiness today.
