Red Lentil Salad Recipe

It’s cold.  It’s rainy.  It’s miserable outside.

BUT I made this gorgeous, delicious lentil salad for lunch for a pick-me-up.

It took all about 30 minutes to prep and cook.  To eat, well, I tried to savor each bite, but I have to be honest. I inhaled it! It was so goooood!

To give a little warmth to your day, make Red Lentil Salad.

Lentil Salad

Ingredients:

½ cup dry red lentils

½ cup carrots, diced

¼ cup red onion, diced

1 garlic clove, minced

1 Tbsp. lemon juice

2 cups of vegetable broth

½ cup celery, diced

Sea salt and pepper

 

1-2 cups mixed greens

 

Directions:

In a pan, combine lentils, carrots, onion, and garlic.  Add vegetable broth and bring to boil.  Reduce heat and simmer uncovered for 20 minutes. Drain lentils and vegetables. Add lemon juice, celery and a dash of salt and pepper.

Serve over mixed greens.

Serves 1-2.
