Black-Eyed Pea Salad Recipe

Happy 2013 to you!

Do you pick a certain word, phrase or idea to guide your year?

I’ve been picking my “words” for ages. Well, the Universe is actually the one who picks.

Each New Year’s Day I would do a labyrinth walk with my dear friend Stephanie. We would meet up in the afternoon…it was a tradition.  We would pick two cards from the velvety purple pouch and then take the walk; meditating on these chosen sacred words.

We did this for 10 years, and I still make a point to pick my cards; my “words.”  I use these as tools for guidance, inspiration and for self-discovery all year long.

My “words” for 2013…

I’m already experiencing thoughts and observations on what abundance truly means for me and  how I can strengthen my faith in different ways.  I’m excited to see how things change, evolve and take shape this year.  I’m pretty psyched!

Now time for a New Year’s recipe.

Let me tell you…I can’t stop eating this salad!  As I chewed each bite, I actually sighed,  “Oh this is soooooo good!” It’s light, healthy and extremely delicious.

 Black-Eyed Pea Salad

Ingredients:

1 14 oz. can of black-eyed peas (I used dried ones; I soaked the peas for 4 hours then cooked for 30 minutes until soft)

1/2 medium green bell pepper, chopped (1/4 cup)

1/4 cup yellow onion, chopped

1 garlic clove, minced

1 avocado, cubed

1 Tbsp. lemon juice

2 Tbsp. extra virgin olive oil

2 Tbsp. red wine vinegar

Optional: I added 1 Tbsp.  tamari sauce (soy sauce) to mine today.  This is optional but totally recommended.

 

Directions:  Mix up all the ingredients in a large bowl. Serve and eat up.

Serves:  2

The salad can be eaten any time either for a  light lunch or  a heartier side dish for dinner.  I actually ate a huge bowlful and now wish I had leftovers!

A fun tidbit:  Supposedly in the South, eating black-eyed peas on New Year’s Day ensures good luck and prosperity for the year ahead. These peas are loaded with vitamins and minerals (potassium, iron, and zinc)  plus have tons of fiber.

    1. Thanks, Nanci, for sharing your 2013 words…I’m really trying to count my blessings each day; sometimes hard to do when it’s a crappy day, but somehow just pausing and looking around at all the good things helps. Happy New Year!
