Festive Avocado Bruschetta
I just LOVE to entertain. Do you?
During the holidays, I like to put a twist to “normal” appetizers. Since I’m doing the Latin theme this year, I made this amazing avocado bruschetta.
The avocado cubes are folded into this sauce made of cilantro, garlic, vinegar, parsley and olive oil called chimichurri. So light and so delicious!
Festive Avocado Bruschetta
Ingredients
2 Tbs. lemon juice
2 Tbs. red wine vinegar
2 cloves garlic, minced (1 Tbs).
3/4 tsp. sea salt
1/2 tsp. red pepper flakes
1/2 tsp. dried oregano
1/4 tsp. ground black pepper
1/4 cup extra virgin olive oil
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsely
2 avocados, peeled, pitted and cubed
6 1/2 inch slices of gluten-free bread
Directions:
Combine lemon juice, red wine vinegar, garlic, salt, red pepper flakes, oregano, and black pepper in a small bowl.
Whisk in olive oil, then add cilantro and parsley. Fold in avocados.
Spoon avocado mixture onto toast slices and serve.

Merry Christmas! Enjoy your beautiful children…they grow so fast! Kevin is home and cooking up delicious vegan treats…he made yummy enchiladas tonight with soy curls…a must have for your kitchen.
