Super Bowl Snack Makeover


The Super Bowl is this Sunday, and I’m already planning the menu for the game.

Now it is unrealistic to not drink beer, taste a chip or two, or eat pizza or wings during the game.  That’s just not going to happen.  It’s a party, and as Americans, we certainly party it up on that day.

So if there is going to be a lot of eating and drinking going on, you can add a healthy twist to a snack.   In fact, Whole Living Magazine just put out over 30 healthier Super Bowl snack ideas on their blog.

Since I’m really into dips (and my kids are  too. Jack loves guacamole!), I’m going to make this white bean dip I got from their site.

As usual, I switched out some of the ingredients and I added spinach.  SO really it wasn’t white bean dip, but green. It’s  Spinach Bean Dip instead.

Check it out:


1 handful of fresh spinach (1 cup)

1 15 ounce can of chickpeas (rinsed and drained; I used Fig Food Co.   brand.)

(I’m really getting into Fig Food Co. and look, they put recipes on the back of their cartons. So cute).

1 15 ounce can of cannelloni beans (rinsed)

2 cloves of garlic, chopped

1 tomato, diced

1 tsp. cumin

1 1/2 tsp. of sea salt

1/2 tsp. of ground pepper

1 Tbsp. of lemon juice

1 Tbsp. of chopped fresh thyme

1 Tbsp. of chopped fresh parsley

pita bread

Here’s how to make it:

1.  Place half of the chickpeas and cannelloni beans, and garlic into a food processor.  I used my Vitamix.  Puree until smooth.  Add remaining beans and pulse until chopped.

2.  Set aside 2 Tbsp. tomato for garnish.  Transfer the mixture to a bowl; stir in remaining tomato, cumin, salt, pepper, and lemon juice.

You can add pita chips, wedges or even a nice multi-grain baguette. Dip away!


I did a test drive last night.  Oh so good!

So who are you rooting for?  Patriots or Giants?  As a Steeler fan, I’m sad they aren’t playing, but I like both teams this year.  Maybe I will cheer for Tom Brady, he is cute.  But Eli, well, he is such a good guy. Hmmm, don’t you just love how I pick?  My husband is probably just shaking his head right now.

I’m having all the Yoga teachers over Saturday night so I think I will make this for them! they love healthy stuff! Heard some yoga students talking about you in the bathroom-good stuff of course, they loved the detox!

    Oh yes, your yoga ladies will love this…it tasted very delish. I didn’t use the yogurt as Whole Living suggested, just FYI. I am headed over to Bikram now…I’m hooked because of you!
