Rock the Tacos is my absolute favorite “clean” taco recipe. You will find this recipe in the Kickin’ It Clean meal plan for Week 2.
I’m a big fan of chickpeas, and here is a quick way to make tacos the healthy way without a lot of fuss.
Rock the Tacos
Ingredients:
1 15 oz. can of chickpeas, rinsed
1 taco seasoning recipe packet (try Simply Organic)
1 Tbps. of extra virgin olive oil
2 Tbsp. lemon juice
8 corn taco shells (try Little Bear brand)
Add ons: chopped tomatoes, mixed greens
Let’s get to it:
Preheat oven to 350 degrees F. Whisk juice, olive oil & spices together. Add rinsed chickpeas and toss until coated. Place chickpeas on a baking sheet and bake for 20 minutes. Assemble tacos with chickpeas, mixed greens, and tomatoes.
Note: You can make your own taco seasoning by blending these ingredients:
- 1 tablespoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper

To simplify even more, could you just cook the beans on the stove top? Have you done that with this recipe before? (Any time I can escape heating the kitchen up with my oven in the hot months is good for me 🙂
Surely, Caite! I love the crunchiness of the chickpeas so baking is great for that. Cook on stove or just rinse and throw on taco (if using organic canned beans).
Yum! Thanks for posting this- can’t wait to try it! On a side note, I’ve been kicking my butt back into gear with boot camp classes, etc. but as the mother of 4, it’s hard to follow a diet (pizza on nights I don’t want to cook, yadda yadda). So I think I’m going to give your “Kickin’ It” program a try! I work so hard in the gym, and while I have lost weight and am happy with my progress, I need to take my diet to the next level. Is your program applicable to someone like me?
Caite, let me tell you, it took me no time to make this. AND it rocks…totally. Good for you! Boot camp is hard! With 4 kids! Damn…you are amazing. I totally get the not cooking everynight thing. That is why there are 5 instead of 7 nights a week for plans. Stuff always happens and if we miss a day, then we feel defeated. This way is more flexible, and you are left with lots of options that can last for a long time. This particular program is for peeps who are already pretty healthy but want to kick it up a notch. If you think that is you, then go for it! I would love it!
