Fall Renewal Spicy Bean Soup


Just made this hearty, warm, and tasty soup!

I’m ready to sit down and devour this bean soup for lunch.  It sure has a kick to it!

Fall Renewal Spicy Bean Soup (it’s on the detox menu!)

Here are the ingredients:

1 Tbsp. extra virgin olive oil

1 garlic clove,minced

¼ tsp. red pepper flakes

½  small yellow onion (1/4 cup), chopped

1 carrot, sliced (1/4 cup)

1 cup vegetable broth

1 15 oz. can of diced tomatoes

1 15 oz. can cannellini beans, rinsed and drained

¼ bunch of kale (1/2 cup), chopped

Directions:  Heat oil in pot over medium-heat.  Add garlic, red pepper flakes, onion, and carrot and cook for 10 minutes.  Add broth, tomatoes and beans and cook for another 5 minutes on medium heat.  Add kale and simmer for 5 minutes.  Season with sea salt and pepper.

Eat it up!

Serves 4.
