I was feeling some pasta for lunch today.
This hit the spot:
Roasted Veggie Linguine
1/2 cup shiitake mushrooms, sliced
1/2 cup asparagus, fresh or frozen, cut into 1 inch pieces
1/4 cup yellow onion, chopped
1 Tbsp. extra virgin olive oil
1 garlic clove, minced
1/4 tsp. red pepper flakes
1/2 cup cherry tomatoes
1/4-1/2 14 oz. package of rice noodles
2 Tbsp. torn fresh basil leaves
Directions: Preheat oven to 450 degrees F. Toss together the mushrooms, asparagus, onions, oil, garlic, and red pepper flakes in a pan. Roast for 15 minutes. Add tomatoes to the pan and roast for 5 more minutes. Meanwhile prepare the pasta according to package directions. Drain pasta and return to pot. Add the roasted vegetable mix and toss with tongs. Season with sea salt and pepper. Throw on the basil for a nice finishing touch.
