Butternut Squash Soup
Well, my lunch date with my friend Emily was rescheduled for tomorrow. Even though I was looking forward to hanging out and going to a restaurant to eat (I’m so wanting someone to serve me food!), I’m kinda happy here at home staying warm and dry. It’s raining and so dreary outside.
It’s a great day to make some soup!
I had left over ingredients from the Fall Renewal 10 Day Detox, so I decided to make this delish soup that took no time to make!
(from Fall Renewal 10 Day Detox)Ingredients:
1 Tbsp. extra virgin olive oil
11/2 cups butternut squash, peeled, seeded and cut into 1-inch cubes (or buy prepared)
1 apple, cored and sliced
¼ yellow onion, chopped
1/8 teaspoon ground cinnamon
1/8 ground allspice
2 cups vegetable broth
Directions:
Heat oil in medium pot over medium heat. Add squash, apples and onion, and cook until almost tender. Stir in cinnamon and allspice. Cook and stir 2 minutes.
Add broth. Heat to a boil. Cook over low heat 10 minutes or until squash is tender.
Place cooked squash mixture in food processor. Cover and blend until smooth, adding enough cooking liquid to make soup of desired consistency. Serve.
Serves 1-2

I made this the other day and it was just as yummy as I thought it would be. Super easy and oh so creamy. I love soup but don’t eat it so much living in Florida, so it’s been some time since I made soup….Now that the weather is cooling off I will make this again, soon 🙂

this is a delicious recipe, true using an emersion blender rather than transfering to a blender. Less clean up and it is magical. 🙂

I just put this on to cook and used up my pumpkin puree (the extra that didn’t go into the pies) and my vegetable stock from the juice cleanse. Can’t wait to try it tomorrow.
