For Day 7, how about starting your day with this tasty breakfast?

This recipe came about in my search for an alternative way to serve up granola. Guests and family members love it because it looks impressive, tastes great and it’s healthy. I love it because it’s super easy and quick to make, it’s also impossible to mess up and fun to dress it up differently each time. Make one big tart and serve topped with seasonal fruit and seeds or my preference is to make smaller individual tartlets and have guests and family decorate their own, it’s fun and interactive.
Easy Breakfast Tart
4 cups homemade or other good quality gluten-free granola
4 Tbsp. Coconut oil
Seasonal fresh fruit
Plain or Greek Yoghurt (I like Coconut Milk Plain Yoghurt)
Seeds (like pumpkin, hemp or sesame)
A small lemon and honey, for serving
Edible flowers, to garnish (optional)
Combine the granola and coconut oil and press into a rectangular or round quiche tin or make smaller individual tartlets. Place in the freezer for 10-15 minutes to set.
Slice or dice fresh fruit and avocado.
Remove the tart/tartlets from the freezer and gently remove from the quiche tin/s.
Place on a serving platter or plates and dress up with yoghurt, fresh fruit, avocado, sprinkling of seeds, a squeeze of lemon, a drizzle of honey and edible flowers if using.
