Grateful Salad
During Fall Renewal 10 Day Detox, I want to shine some sparkle on the amazing people in my life. So for the next 10 days, I will feature recipes from superstar clients and fellow health coaches.
For Day 4, I would love to introduce you to my gorgeous friend and fellow health coach, Amy Glass. Let’s be grateful for this beautiful meal!
There is no exact recipe, just grate your favorite fresh veggies raw on the smaller round holes on a box grater. The grated veggies will be moist and flavorful enough on their own or you could add some lemon, fresh or dried herbs, apple cider vinegar, olive oil, dried or fresh fruit, nuts, seeds, hummus, quinoa or whatever else you dream up. They can be mixed into any salad or eaten plain as a side dish. They can also be warmed or even used to garnish a soup. Just choose from the freshest seasonal veggies you can find, the veggies all mix and match really well. They are best eaten freshly grated. Be creative and enjoy!
Ingredients:
1-2 beets (red and/or golden), peeled (hold the beets with a cloth or rub some olive oil on your hands so they don’t become beet red)
2-3 medium carrots, peeled
1-2 medium parsnip, peeled
1/2 celery root (also called celeriac), peeled
Directions: Using the small round holes on your box grater, grate the veggies over a cutting board or plate, adding the grated veggies to a bowl as you go. The beets tend to turn everything red so try to keep them separate. Enjoy as is or sprinkle with apple cider vinegar, lemon or your favorite fresh herbs. It’s that simple!
