Stacy’s Quinoa Recipe
During Fall Renewal 10 Day Detox, I want to shine some sparkle on the amazing people in my life. So for the next 10 days, I will feature recipes from superstar clients and fellow health coaches.
For Day 6, you have to make this rockin’ quinoa dish from detox and Kickin’ It Clean goddess and mama, Stacy Niehus!
This is one of my favorite meals!
Stacy’s Quinoa
Ingredients:
1 cup red quinoa, cooked with vegetable broth
1-15 oz can of black beans, drained
2 cups roasted corn kernels
1 avocado, cut into 1/2″ pieces
1 pint grape tomatoes, halved
1/2 cup red onion, finely diced
1/2 bunch cilantro, chopped
1/4-1/2 cup olive oil
2-3 tbsp lime juice
Sea salt to taste
Directions:
Make quinoa according to directions with broth or water.
I chop all the ingredients and literally throw them all together in a big bowl. Makes 6-8 servings.
Toss ingredients with lime juice, olive oil and sea salt and pepper to taste.
Enjoy! Everyone LOVES quinoa!

Doesn’t it? Quinoa is one of my favorite things to make; pop in rice cooker and pack up in fridge for left overs. Easy!
I love quinoa too! This looks wonderful! I’m going to make it for a cookout tomorrow. One question — Do you have to rinse it before you cook it? I feel like so much gets wasted when I rinse it.
Lovely, Joanna, it’s great to hear from you! As for quinoa, yes, you must rinse unless you buy a package that is already pre-rinsed. I still do it to make sure. The easiest way to rinse quinoa is in a fine mesh strainer. Just pour the dried quinoa in and hold it under cold running water (filtered), using your hands to stir. Let it drain right in the sieve while you measure your water and then dump it right in. Hope this helps!
