
Sloppy Juicy Burger Recipe
Memorial Day Weekend marks the beginning of summer. BBQ’s, cookouts, pools, trips to the beach…summer, hmmmm.
It’s been so cold here in Annapolis, and it kinda bums me out. I am still wearing sweaters, and it’s the end of May!
But fun still can be had even if I actually wore my winter coat coming home from dinner.
My friends Jodi and Carleen, their families, and mine, decided to go to a local crab shack by boat. Note: Just in case you didn’t know, Maryland is known for everything crab.

I swear this was the absolute best summer kick off! I will remember the feeling of happiness, family and friendship forever.
Now if you are doing something different and planning a cookout at your home, I got the perfect burger you can make. I’m actually making these today since my sister, bro-in-law, and my sweet little niece, Lauren, are coming over.
Sloppy Juicy Burger Recipe
Ingredients:
½ cup brown lentils
1 yellow onion, chopped (1/2 cup)
1 carrot, shredded
½ cup marinara sauce
½ cup gluten-free pancake mix (Bob’s Red Mill brand)
Gluten-free burger buns
Directions: In a medium-sized pot, add lentils with 1 cup of water. Bring to a boil. Reduce heat, and then simmer uncovered for 15 minutes.
Place all ingredients, including lentils, in large bowl and stir to form batter.
Spray large pan with cooking spray (Spectrum’s Organic Sunflower Oil recommended) or coat with extra virgin olive oil. Heat pan over medium heat. Scoop batter into round balls (1 inch thick) onto pan and cook for 5 minutes. Flip and cover pan for 5 minutes. Serve on buns ( I used Udi’s GF hamburger buns).
Makes 2-4 servings or 4-8 patties depending on the size.
*Add your favorite condiments. You can also grill these, but they are quite sloppy so I prefer to cook in a pan.

That’s one sloppy burger! So delish!
