
Strawberry Coconut Ice Cream Parfaits
May is my favorite month…it’s party time for me. First my birthday, next Mother’s Day…then Memorial Day which kicks off the summertime.
Kevin tells me this is a VERY busy time for him. Lots of prepping and planning going on for me!
He and the kids do a great job of making me feel special especially for Mother’s Day. Every Mother’s Day they plan cool stuff for me to do. One year we went to a wine festival, another to the beach.
This year, we will be on the soccer field. Jack’s game is smack-dab in the middle of the day.

We can’t really do brunch, but we can have a late lunch. So that is the plan. I’m not exactly sure of all the details yet, but the food will be delicious no doubt.
I requested this yummy dessert to be served (as I devoured it during testing!):
Strawberry Coconut Icecream Parfait
To make icecream:
Ingredients:
3 cups frozen unsweetened strawberries
1 cup coconut milk (I used full fat)
Directions: Place all ingredients into a blender. I used my Vitamix. Blend for about 30-60 seconds.Use the tamper to press ingredients into the blades. Don’t over mix or melting will occur. Serve immediately. If mixture has the consistency of a milkshake, firm it up by slowly adding a cup of ice cubes. Process until smooth.
*I used the directions from the Vitamix booklet. Adjust settings and ingredients to make this work for you.
To make parfait cups:
Ingredients:
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 Tbsp. raw organic agave nectar (or raw honey if want vegetarian version)
½ lime
A few fresh mint sprigs
Directions: Toss berries with agave in a bowl. Layer the icecream with berries in parfait glasses. Spritz with lime and top with mint sprigs.
Serves 4
*It’s spring so eat all the strawberries you can! If it’s too much of a strawberry overload, just use the blueberries and raspberries.
Also, making this ice cream isn’t hard or a long process. It took all of 2 minutes to slice the strawberries and blend up with coconut milk.
This treat is realllllly super delicious. So sweet…so light…so perfect for a celebration.
I’m thinking massage and champagne after lunch, too. Oh and maybe even a nap. Ahhhhh… a fabulous day!
