Get Lucky New Year’s Recipe

Happy New Year!

I hope you got to spend the first day of your year doing something you love.

I slept in, sipped on a green smoothie, and went to my Bikram  yoga class. Sleep, greens and yoga….ahhhhh.  A great way to start the year in my book!

I love rituals and highly recommend developing a few of your own to start your year.

I have a ritual of setting an intention, one word that acts as a theme during the year. My 2013 word was TRUST.

2014 is BELIEVE.

Believe

Do you know your 2014 word?

Possibly words like:

Act   Commit   Love   Possibility   Open   Authenticity   Play   Presence   Balance

…are popping up in your mind.  If you don’t have one now, I know it will come to you. Mine came to me clear as day while I was in the shower.  I was like, “Well, hells yes! Believe it is!”

I BELIEVE.

I believe that all is okay. I’m okay. And whatever happens to rock my world, good or bad, that I’ll be okay.

I believe that there’s no need to push or make things happen.  I see now that letting things flow, be, works, and I’m hooked on that feeling.

I believe that I have the power to create my life. My visions; I can do that. I can do anything that is in alignment with my true self. I have what it takes.

I believe that I am supposed to shine and need to protect myself from people who want to dim my light.

I believe that I’m awesome sauce the way I am.

I believe that I have a good life, a very good life, and I know that there is more goodness coming.

I believe now…where I don’t think I truly did before.  I know, I believe, that I’m on the right path to serve others as well as live the life I’m meant to live.  I don’t have the doubt or questioning that kept me stuck.

I’m invigorated about my word…and at ease.

Another ritual of mine deals with food (why of course!).

I also like to cook a special New Year’s meal to start things off on the right foot.  Something with the traditional black-eyed peas and collards feels good.

Black-eyed peas are eaten for luck and good fortune and represent coins while collards represent paper money.

I’m all about that!

Ready to get lucky?  Here’s you go:

Get Lucky Beans and Greens

Get Lucky Beans and Greens

Ingredients:

1 Tbsp. extra virgin olive oil<
1 15 oz. can of black-eyed peas, rinsed and drained
1 Roma tomato, chopped (1/4 cup)
1/4 cup green onion, chopped
1 cup collards, stem removed, cut into ribbons (or tear into pieces)
1 Tbsp. red wine vinegar
1 Tbsp. lemon juice
1 Tbsp. fresh oregano, chopped
Sea salt and freshly ground pepper to taste

Directions:

Heat oil in medium-sized pan over medium-high heat.  Add beans, tomatoes, onions and cook for 2-3 minutes.   Add collards and cook for another 2 minutes.  Remove from heat and add mixture to bowl. Stir in vinegar, juice, and oregano and mix well.  Season with salt and pepper.  Serve warm.

Serves 2

*Instead of collards, you can sub with kale. I wanted all the paper I can get so I stuck with the collards. 🙂

“She’s up all night for good fun.  I’m up all night for good fun.  She’s up all night to get lucky.  I’m up all night to get lucky.”

Yes, that song is in my head and the reason for the name of my New Year’s dish!
