Holiday Peanut Butter Fudge Brownies

The holidays… I always think I have lots of time to get ready and then BAM, well, not so much! I haven’t started shopping and cards, hmmmm, I am not sure they will happen (but hopeful!).

BUT we did get our tree early compared to other years… we are famous for waiting until the week before, but this year we are ON it.

My little family and I had the absolute best time at the Hemlock Farm. The family who owns it had crafts (we made mini trees from left over branches and stumps), apple cider, popcorn, candy canes and a soccer ball (Jack was in heaven!).

Oh, and a playground.

Even though Jack and Kate are tweens, they played for almost 2 hours on the swing set!

I thought the family was going to kick us out but they instead offered Kevin and I a beer to watch the Army- Navy game. Such cool peeps they are!

After we got our tree, I was off to a cookie exchange party. In fact, it was more like a cookie contest party. Every year I make some vegan treat that surprises everyone with yumminess ( I just don’t tell them that I used almond milk, cacao and coconut oil!). 

This year, I was running late so I threw together a few ingredients and luckily, happy surprise! Very chewy and chocolately! I thought they were going to be an epic fail (and even told the hosts, Suzette and Chad), this becasue I forgot ot add the coconut oil. BUT all worked out and I even got 5 votes (almost won!) for taste! Next year I’m really going try hard to win!

Nut Butter Fudge Brownies

Ingredients:

1 cup cacoa powder

1/2 cup peanut butter (or almond butter)

1/2 cup almond milk

1/2 cup filtered water

1 Tbsp. coconut oil

1 Tbsp. almond extract

Pinch sea salt

1/2 cup chocolate chips (dairy-free)

Directions: In a food processor (I actually used my Vitamix), pulse all ingredients except chocolate chips.  Line 6 x 6 inch baking pan with parchment paper.  Press chocolate mixture into pan and smooth with fingers. Top with chips. Store in refrigerator for 2 hours. When ready to serve, cut into 4 inch pieces and eat up.

Makes 12 bars (approximately)
