Zen Collard Wrap Recipe

It’s time for lunch!

So instead of the same ole same ole salad, try making wraps with collards.

Yep, collards. Sorry, kale, you might have to move over. Collards is the new sexy green, at least in my book.

Collards are super-rich in anti-inflammatory powers and also packed with :

  • vitamin A (yay for the eyes!)
  • vitamin K (essential to keep your blood clotting and prevents osteoporosis and althimers)
  • calcium ( great for your bones)
  • fiber (keeps blood sugar level)
  • chlorophyll (alkalizing and balancing)

Let’s make the Zen Collard Wraps, shall we?!

Zen Collard Wraps


1 zucchini, chopped (1/2 cup)
1 garlic clove, minced
½ lemon, peeled
1 Tbsp. extra virgin olive oil
¼ cup tahini
¼ cup sun-dried tomatoes
2 Tbsp. dried basil
1 tsp. sea salt
2 collard green leaves


Blend everything except collard greens together in food processor until smooth.

Zen Collard Wraps

Slice the thick stem away from collard leaves so you end up with two halves of the leaf.


Zen Collard Wrap
Wrap a spoonful of hummus up in each leaf. Serve.

Serves 1-2
